VLOG: Healthy Gluten Free Stuffed Peppers (YouTube)


Hi loves! You know I love to cook!! After I had the stuffed peppers last week on vacation I wanted to try to make them myself. The talk through tutorial is embedded at the bottom of the page or you can click here to go to the video also.

Ingredients:

1.5 pounds ground turkey
1 cup cooked white rice
three cans diced tomatoes
3/4 cup of chicken stock
half a can of tomato paste
4 large bell peppers
evoo
5 garlic cloves
1 medium onion
1 teaspoon red pepper flakes
salt & pepper to taste
1 tablespoon garlic powder
1/2 tablespoon celery salt


Directions:

Cut the tops off of the bell peppers and remove the ribs & seeds

Boil water and immerse bell peppers. Let boil for 3-4 minutes to get soft. Then rinse in cold water and let them sit to the side.

Heat pan (medium heat) and add a little evoo. Add the ground turnkey, salt, pepper, onion, and red pepper flakes and cook until browned.

Cook one cup of white rice while the meat is cooking.

Open the three cans of tomatoes, tomato paste, garlic powder, celery salt, and chicken broth and combine in a bowl then sit to the side.

Pre-heat the oven to 350

Once the rice is done and the meat is done combine them in a different bowl with 1/4 cup of chicken broth to add a little juiciness since turkey is very lean.

On the stove using the same pan that the turkey was cooked in, throw in the 5 garlic cloves and drizzle a little oil into the pan and let them simmer for 3 minutes turning occasionally. Once they are soft crudely cut and add to the rice/meat mixture (this will add an unexpected kick of flavor).

Add the rice/meat mixture to the bell peppers making sure not to spill any. Pack as much in as possible then pour the tomato sauce mixture over the peppers and place in the oven for 90 minutes. Occasionally open the oven and spoon the sauce over the tomatoes.
